Olive Grove and Harvest

The OH EVOO 1280 olive groves are located on the hilly terrain of Western Istria, at an altitude of 120–140 meters. The deep red soil, rich in minerals, ensures a naturally limited yield, resulting in exceptional fruit quality. A warm spring and optimal rainfall contributed to even flower development, while a hot summer with a favorable rain distribution enabled abundant blossoming and an ideal oil content in the fruit. The harvest took place in mid-October using mechanical tree shaking. The olives were processed the same evening at the mill and stored in stainless steel barrels to preserve freshness.

Processing and Maturation

After the harvest, the olives were immediately transported to the mill, where they were cold-pressed the same evening at a temperature of 27°C. This process preserves all essential aromas and nutrients, ensuring high oil quality. After pressing, the oil was stored in stainless steel barrels under controlled temperature and without oxygen to prevent oxidation and maintain freshness. Maturation in stainless steel allows for a fine harmony of flavor and aromatic balance, which further develops over the following months before bottling.

Characteristics and Taste

OH EVOO 1280 is characterized by its greenish-yellow color and a distinct aroma of freshly cut grass and hay. On the palate, it delivers a rich, rounded texture with a characteristic “spicy” note, derived from its high polyphenol content, making it exceptionally healthy and flavorful.

Serving Recommendation

Ideal for fresh salads, marinating fish and meat, seasoning vegetables, and as a complement to aged cheeses and light dishes.
