Olive Grove and Harvest
The OH EVOO 1430 & 5720 DENOCCIOLATO olive groves are located on the rolling hills of Western Istria, at an altitude of 120-140 meters. The deep red soil, rich in minerals, naturally limits yield, resulting in olives of exceptional quality. A warm spring and evenly distributed rainfall contributed to abundant flowering, while the hot summer ensured an optimal oil content in the fruit. The harvest took place in early October using a mechanical shaking method, after which the olives were processed the same evening in the mill and stored in stainless steel barrels to preserve their freshness and nutritional value.
