Olive Grove and Harvest

The OH EVOO 1610 olive groves are located on the same hilly slopes as OH EVOO 1280, at an altitude of 120–140 meters. The mineral-rich soil and limited yield ensure high-quality fruit, while the warm spring and balanced rainfall allowed for the perfect development of the olives. The harvest took place in mid-October using mechanical tree shaking, and the olives were processed the same evening at the mill, then stored in stainless steel barrels to preserve the oil’s freshness and nutritional value.

Processing and Maturation

The olives were immediately cold-pressed after harvest at a temperature of 27°C, ensuring high oil quality while preserving rich aromas and essential nutrients. The oil is then stored under controlled conditions in stainless steel tanks, where it matures without exposure to oxygen, preventing oxidation and ensuring flavor stability. This careful processing allows the oil to develop to its full strength, with pronounced fruitiness and a recognizable freshness.

Characteristics and Taste

OH EVOO 1610 stands out with its deep green color and intense aromas of fresh tomato and cut grass. On the palate, it is rich and rounded, with a distinctive spicy note due to its high polyphenol content, providing a long-lasting and piquant finish.
